Vegetable Bulgur Pilaf Recipe, How to Make?

Materials

  • 1 cup bulgur wheat
  • 1 onion
  • 1 tomato
  • 1 zucchini
  • 1 bowl of boiled peas
  • 2 tablespoons of olive oil
  • 2 spoonful butter
  • 1 tablespoon of tomato paste
  • 1 cup of vermicelli
  • 2 cups of hot water
  • 1 teaspoon salt

Optional:

  • 1 teaspoon paprika
  • half a teaspoon of cumin
  • Half a teaspoon of black pepper

For the above:

  • 1 teaspoon dried mint

You can also add carrots and fresh peppers to this pilaf according to your desire.

Since carrots are one of the vegetables that cook late, you can use them by boiling them beforehand, just like peas.

You can use chicken broth, vegetable broth or broth instead of the water you will add to the rice.

Vegetable Bulgur Pilaf Recipe

1. Chop the onion finely.

2. Peel the skin of the tomato and dice it finely.

3. Chop the zucchini to medium fineness and size, not too small.

4. Take the olive oil in the rice cooker first and add the butter when it gets hot.

5. When the butter has melted, add the onion and vermicelli. Fry until the onion caramelizes and the vermicelli turns pink.

6. Add tomato paste and fry until fragrant.

7. Then add the vegetables and continue frying until the tomatoes lose their vitality.

8. Then add the spices you want to add except bulgur and dried mint and fry for a few minutes.

9. Finally, add the hot water, mix once or twice and close the lid.

10. Cook on low heat for 10 minutes.

11. When the bulgur is eye-catching and completely absorbs its water, take it off the stove.

12. Place a clean kitchen towel under the lid and let it rest for 10 minutes with the lid closed.

13. Serve the brewed bulgur pilaf with vegetables by sprinkling it with dry mint according to your desire.
